Recipe of The Day: Salmon Patties/Croquettes

This is really JP’s specialty, but I make it also. I will say he is the expert on salmon patties. This is another easy recipe, and takes no time to prepare. Here we go…

Salmon Patties or Salmon Croquettes

Prep Time:15 Minutes
Cook Time:20 Minutes
Serving: Feeds a family of 4

Ingredients:

1 can Salmon
1/2 cup onion (or more)
2 eggs
1/3 cup flour (or more if mixture isn’t thick enough)
1/2 cup of oil for frying
1tbl spoon seasoning salt (or more it’s to your taste)
salt and pepper to taste (you can taste while raw to make sure. Nothing will happen.)

Open can of Salmon pour out juice, but not all leave a little bit in the can. Use a mixing bowl to mix up all your ingredients. Start with the Salmon, pour all contents into bowl. You will need to pick out all of the bones. Chop your onion and throw in bowl. Beat eggs, and add to bowl. Add your seasoning and mix well. Add a bit of flour to thicken up mixture. Heat oil in a frying pan. Drop a tablespoon of mixture into hot oil. Fry until crispy and golden brown.

JP Note: Notice how the oil only comes up to about half the height of the patty. This lets both sides cook evenly and you can see the progression as it browns on either side. More oil is not always better.
