Recipe of The Day: Stuffed Manicotti

Today’s recipe is one of Feather’s favorite dishes! I’ve made this for her just about every Valentine’s Day. Pretty simple and very tasty. Here we go…

Stuffed Manicotti

Prep Time: 30 minutes
Cook Time: 30 minutes or until Cheese is scorched- kissed-brown
Serving Size: 4-6 people

Ingredients:
1lb. Italian Sausages (or 3 sausages)
1 Cup Four Cheese Mix Blend
1 lb. fresh spinach
1 tbsp. chopped onion
2 beaten egg
2/3 c. ricotta cheese
1/2 c. grated Parmesan cheese
1/8 tsp. ground nutmeg
1 qt. Del Monte Garlic and Onion Spaghetti Sauce
1/3 cup of green onion
1 box Manicotti

Some of the ingredients

Start to boil Manicotti, follow directions on box.

Boil spinach with teaspoon of salt.

Brown sausage in saute pan.

We grow our own green onions.

Chop green onion.

Chop your white onion.

Then mix.
Mix spincach, ricotta, onions, and eggs. Mix well.

Then add in the seasoning and sausage. Mix well.

Spread some of the sauce on the bottom of baking dish.

Sprinkle some Parmesan cheese over the sauce.
Stuff mixture into Manicotti and place into baking dish.

Pour remaining sauce over Macnicotti. Sprinkle some more Parmesan cheese on top of that.


Cover Manicotti with cheese blend. Place in 350 degree oven and bake for 30 minutes………………………….DING!

Done!

    That looks great! Feather is a lucky duck! I’ve never thought of growing my own green onions, but that makes perfect sense, because I can NEVER use an entire bunch when I have to buy them at the store! I have heard, however, that you can replant them if you do buy them.
