Recipe of The Day:Cube Steak w/Gravy and Mashed Potatoes

Finally got around to snapping photos of something I really had to take time to cook. lol I know a lot of people who frown upon cube steak. But, hey in this family we dig it! If cooked correctly, it is very tasty. Some people tend to cook it, and it’s to tough. Cube steak is a cheap cut of meat, and I believe the butcher actually tenderizes it. I personally like to do a little extra tenderizing myself. I learned this recipe from my Grandmother. So here we go…

Prep Time:15-20 minutes
Serving Size: Family of Four
Cook Time: 30minutes

Ingredients for Cube Steak:
1 package of cube steak
1 medium onion
1 packet of Brown Gravy Mix (gravy packet not shown, you can make your own if you want or use any brand you like)
flour for dredging
garlic salt
Tony Chachere’s Creole Seasoning
Onion Powder

Place one piece of cube steak in a ziplock bag. Take a meat tenderizing mallet or anything you can use to beat the heck out this meat! I used one of JP’s hammers! lol

Beat it until it looks like this. Almost thin.

Lightly season. You do not have to use creole season, I just like the extra kick. You can use season salt. Do a light coat, not to much.

Cut large pieces into smaller ones.

Your pieces should look like this.

Dredge in flour.

Place enough oil to coat bottom of pan. Heat on medium heat. Tap off excess flour, and place in hot oil. Do not cook all the way. Just get a nice brown look on both sides.

They should look like this. Drain on a paper towel, and set aside.

Chop up your onion. I like to use a bit of the dripping for the gravy. Drain most of the oil out. Add about a 1/2 a cup of water to the drippings. Throw in onion. Mix your gravy packet, according to package. Pour in pan, and let simmer a few minutes.

Drop in the pieces of cube steak. Cover and let simmer about 20 minutes.

Mashed Potato:
6 medium potatoes
salt and pepper to taste
sour cream
Peel and chop potatoes. Place a pot and cover with water. Boil potatoes until you can break them easily with a fork.

Drain potatoes, and place in a bowl. Add in a bit of salt, pepper and butter.

Start to mash potato with fork or potato masher.

Add in a tiny bit of milk. (sorry I do this all by eye) Don’t put a whole lot. The potato should still be a little dry at this point. Mix well.

Put in about a 1/4 cup sour cream. Mix in good. Taste to see if potatoes need more salt and pepper. Add in more if you need more. Add in more milk if mixture is to dry. Potatoes should be creamy. I personally like them a little thick.

That’s it! This is great comfort food. I made some French Cut Green Beans for my veggie. You can adjust the taste of this to your liking. If it’s to salty, cut back on some of the seasoning. Hope you dig it!

    That looks cool, I usually make stuff like that but I mostly use mushroom sauce on the top , but I like that sauce you used.
